One Bowl, Half a Day Left: Taiwan Beef Noodles by County, Paired With an Afternoon Ticket

"Is everyone talking about beef noodles this week?" A colleague opened with that one morning. There was a wave of beef-noodle chatter across Taiwan in August, and I am not going to relitigate what caused it. What interested me was the other half: during the days when those three characters were being searched into the ground, almost nobody connected them to "so where should I actually go this weekend?"

I did not see the connection at first either. It took a few attempts at planning to notice that beef noodles happen to be the single most evenly distributed dish in Taiwan: north, centre, south and east, every county has a shop whose name locals can produce on demand, and most of them sit in the city centre near a station, at NT$150-280 a bowl (about US$5-9). It is a natural starting point for a day trip.

One more thing to get straight before you feel misled halfway through. I searched our own coupon database for "beef noodles" and got zero results. Beef noodle shops are almost all independent operations and do not list on Klook, KKday or similar platforms, so this article contains no beef noodle coupon of any kind. The noodle recommendations are just recommendations; I earn nothing from them. What you can actually buy in advance and get a discount on is the attraction ticket for the second half of the day, which is exactly how this is structured: the bowl decides which county, the ticket decides what you do with the afternoon.

The logic here: noodle shops do not sell tickets, so the ticket has to match the county

Here is the seven-county table first, so you can jump straight to whichever square you fancy this weekend. I copied the opening hours after checking each shop's own announcements against map listings, but small shops change their hours often, so confirm once more before you set out.

Four of the seven shops open only for those three or four hours around lunch. This is where this kind of itinerary most often falls apart, and I will use my own tuition fee to make the point when we get to Taichung.

Taipei: the bowl in an alley by the main station, paired with an afternoon in Beitou

Liu Shan Dong hides in an alley off Kaifeng Street beside Taipei Main Station, has been selling since 1951, is now run by the second generation, and holds a Michelin Bib Gourmand listing. Last time I went, on a weekday at half past eleven, seven or eight people were already standing outside. What separates it from other Taipei institutions is that the clear broth is the main event, not the braised. Hours are 08:00 to 20:00, closed Sunday, with no afternoon break — rare in this trade.

I recommend this one to anyone building this kind of itinerary for the first time, and the reason has nothing to do with flavour. It is the location. Under ten minutes on foot from Taipei Main Station means you can step off the high speed rail or a regular train, eat, then walk straight into the metro — no car rental, no parking maths. Beginners planning a day trip almost always underestimate the transfers, and this shop deletes that problem outright.

In the afternoon I head for Beitou. The Tamsui-Xinyi line runs all the way to Xinbeitou, and after a soak you come back to Taipei Main Station in time for an evening train. Buy the hot spring pass in advance: the Xiang Hot Spring public bath and private suite voucher in Beitou splits into public pools and private rooms, and the private room only makes sense for two or more — solo, buy the public pool. Do not worry about not knowing the etiquette; it is signposted on site.

One more thing to flag: if the weekend you pick falls in October, this route collides with the Taipei International Beef Noodle Festival. The 9th to the 11th of October is exactly the whole Double Tenth long weekend, and high speed rail seats and accommodation over those three days have to be booked on a completely different schedule from a normal weekend.

Jiaoxi, Yilan: the noodles and the hot springs are on the same street

The advantage of the Jiaoxi square is that everything is walkable. Qianlongfang sits at No. 101, Zhongshan Road Section 2, and Jiaoxi's hot spring park and Tangweigou foot baths are on Zhongshan Road as well, so once you are off the train you barely need transport again. Hours are 11:15 to 14:00 and 17:00 to 21:00 — note the afternoon break, unlike the Taipei shop.

That said, I changed my mind after actually running this with friends. The problem with soaking in Jiaoxi is that it goes too smoothly: the whole afternoon collapses to about two hours, and plenty of people finish eating, finish soaking, then sit scrolling on their phones waiting for the train. So I now treat Jiaoxi as an evening, not an afternoon, and fill the gap with the National Center for Traditional Arts Yilan park ticket with DIY experience voucher. The park is in Wujie Township, about half an hour from Jiaoxi, and the DIY session eats roughly ninety minutes, which fills the hole neatly.

The order becomes: noodles at midday, the arts park in the afternoon, back to Jiaoxi for the hot springs at dusk, train home at night. That is a full day.

Taichung: what ruins this day is usually not the broth, it is the closing day

Let me start with my own embarrassment. The first time I took friends to Wu Jia Zhuang, we turned up on a Tuesday at noon to a shuttered front. It closes Mondays and Tuesdays, I had not checked at all, and I stood on Yongxing Street for three minutes before admitting it was my fault.

The cost that day was specific. We ate somewhere nearby instead, and two bowls came to less than NT$100 (about US$3) more — that is not the point. The point is that we already held afternoon-session Lihpao Land tickets, and between hunting for a shop, queueing and eating all over again, our entry time slipped from 13:30 to 15:10. A full-day ticket used for half a day. I worked it out afterwards: each of us threw away over NT$200 (about US$6) of face value.

So my advice for the Taichung square is to reverse the order: confirm the shop is open that day first, then decide whether to buy tickets. If you really want Wu Jia Zhuang, avoid Monday and Tuesday. If Monday or Tuesday is the only leave you can get, switch to another clear-broth or dry-tossed shop in Taichung rather than forcing it.

On tickets, the Lihpao Land combo for Discovery World, Malawan and the Sky Dream Ferris Wheel is the easiest single purchase for filling a Taichung afternoon. The park is in Houli, about 40 minutes' drive from central Taichung. Put simply: noodles downtown, ticket in Houli, and that drive has to go into the plan before you eat, not after.

Gangshan, Kaohsiung: Taiwan's first Sichuan-style beef noodle may have started on this street

This square gets more space, because it is not merely "there is a good beef noodle shop in Kaohsiung". It involves the origin of Taiwanese beef noodles altogether.

If you have been to Sichuan you may have noticed something odd: you cannot find "Sichuan-style braised beef noodles" in Sichuan. The reason is that the dish is not from Sichuan at all. According to research by the late food historian Lu Yao-tung, it originated in the military dependants' villages around the Gangshan air force base in Kaohsiung. The air force academy relocating from Chengdu brought a large Sichuanese community with it, and kitchen cooks braised beef with doubanjiang, Sichuan pepper and star anise, then served it over noodles made from US-aid flour. Gangshan chilli bean paste is itself made in imitation of Sichuan's Pixian doubanjiang, which is why the word "Sichuan" stayed in the name.

The earliest documented Taiwanese Sichuan-style beef noodle shop is Gongyuan Pork Knuckle & Beef Noodles, opened in Gangshan in 1962 at No. 19, Weiren Road, hours 09:00 to 20:00. You can still taste that fifty-year-old version there today. I did not know any of this either; I found it while researching, and now I tell friends the story before we go, which changes how the bowl tastes entirely.

One qualification: this origin account is not the only one. The food writer Liang You-hsiang argues for Tainan instead. I go with the Gangshan version because it comes with a specific shop, a specific year and a specific bean paste origin that all line up, but I would not say the other account is wrong.

There are two options for the afternoon. For something relaxed, head south to the Pier-2 Art Center and walk the district; no ticket needed. To use the day fully, go straight to the E-DA Theme Park day ticket at 25% off. E-DA sits on Guanyin Mountain, about 30 minutes' drive from Gangshan — closer than from central Kaohsiung. That is one of the few points where the Gangshan square beats the city.

Tainan is the exception: here the star is beef soup

Honestly, my first draft had a beef noodle shop in the Tainan square. Then I asked a colleague who has lived in Tainan for more than a decade and found I had it backwards: Tainan's real signature is fresh-slaughtered beef soup, blanched at dawn and served with rice, not noodles. Hunting for a representative bowl of beef noodles in Tainan was me applying northern logic to a city that does not run on it.

So the Tainan square inverts entirely: soup in the morning, attractions in the afternoon. The Ten Drum Culture Village day and starlight tickets at 6% off is the one I reach for most; the park is a converted sugar refinery, installations by day and illuminations at dusk, and one ticket carries you from afternoon into evening.

That is all for this square. The point about Tainan is to admit up front that it does not play this game.

Hualien and Taitung: eastern shops close early, so run the day backwards

For these two squares the thing to watch is not quality, it is timing. I had originally intended to recommend Xiang Beef Noodles on Zhongshan Road in Hualien City, and discovered while fact-checking that it closed on 12 January 2026 and moved north. I am writing that out rather than quietly swapping it, because it is precisely the thing this article keeps arguing: anchors in the east move more easily than you expect, and those thirty seconds before you leave are not a formality.

The replacement is Laogu Beef Noodles in Ji'an, registered at No. 92, Guanghua 6th Street, 10:30 to 15:00, closed Sunday, NT$150 (about US$5) a bowl. It is lunch only, so the Hualien square never had a "wander around then have dinner" option to begin with. If you want something earlier, head south to Uncle Sun's Beef Bone Noodles in Fenglin, 06:30 to 18:00 Monday to Saturday and until 14:00 on Sunday, beef bone noodles at NT$140 (about US$4) — but it also closes on the 1st, 2nd and 3rd of every month, which is the single easiest trap in this whole article, because it has nothing to do with the day of the week and checking the weekday will not reveal it. Taitung's A-Niu Champion Beef Noodles is at No. 83, Zhonghua Road Section 1, 11:00 to 14:00 and 17:00 to 20:30; its champion clear-broth half-tendon half-beef bowl is NT$250 (about US$8), and the shop lists wins in the beef noodle festival's clear-broth category in 2013, 2014 and 2019.

Here is the complication: many of the east coast's popular activities are also stuck in the morning. Whale watching sailings cluster from early morning to midday, so if you eat first and go after, you may be left with the hottest slot of the afternoon.

My fix is to run it backwards. Sail or enter the park in the morning, return to town for noodles at midday, then put something unhurried in the afternoon. For Hualien, the Farglory Ocean Park two-person day ticket, buy one get one free suits a pair; the park is in Shoufeng Township, about 30 minutes' drive from Ji'an or Hualien City. For Taitung I give the afternoon to the Hongye Valley Green Energy Hot Spring Park package in Yanping Township, about 40 minutes away, which finishes right in time for an evening express train or flight.

Renting a car matters far more in the east than in the west. There is no convenient bus between Taitung city and Hongye Valley, and that is not a leg I would gamble on public transport.

Getting between counties: the high speed rail ticket overseas visitors can actually buy

Once you start chaining two counties in one day, transport, not admission, becomes the largest line in the budget. The high speed rail runs the whole west coast, and Taipei to Zuoying takes roughly an hour and a half, which is what makes a "noodles in one county, ticket in another" day feasible at all.

If you hold a foreign passport, the ticket to look at is the Taiwan High Speed Rail ticket for non-Taiwanese passport holders, which is sold specifically to overseas visitors. Book it before you fly rather than at the counter; the counter works, but on a long weekend the seat you want may already be gone, and this is the one component of the day you cannot improvise your way around.

The east coast is a different matter — Hualien and Taitung are not on the high speed rail, so those two squares run on the regular rail network or a rental car, and the timings in the sections above already assume that.

The four steps I use to plan a day like this

The beginner section goes here. Four steps, no need to overthink it. This is what survived after running the trip a few times with other people.

First, check the shop's closing days and lunch window. That is the only anchor in the day that cannot move. Wu Jia Zhuang closes Monday and Tuesday, Liu Shan Dong closes Sunday — those two facts alone can decide which day you travel.

Second, draw a 40-minute driving radius around the shop and pick the afternoon attraction only from inside it. Yongxing Street in Taichung to Lihpao in Houli sits right at that ceiling; Weiren Road in Gangshan to E-DA is only 30 minutes, and the difference in how the day feels is large.

Third, buy the ticket, do not reserve the noodles. Attraction tickets have early-bird and discount pricing; noodle shops almost never take bookings, so you queue like everyone else. Before buying, compare the same ticket on more than one platform — deals like Agoda's up to 15% off activities and attraction tickets occasionally undercut the mainstream platforms, and I learned that step the expensive way.
